There is no motive in any respect why you can’t start to consider taking a holiday even with an ostomy. Journey tip number one would be to get good insurance coverage, I have not been to Nepal but Tibet could be very similar and health care is pretty basic by our standards in a variety of places and the altitude positive takes some getting used to in case you are a coastal dweller :). Travel gentle and be prepared to benefit from the people and the nation and you should have a ball especially should you make an effort to meet the locals.
